I was gone for a while but I am back to give you all some great nutrition and health information. I am excited because in my absence I have gathered some new information to share and will also try to incorporate some information and blogs about fitness to try and get you moving! In honor of this snow day here in the DMV(D.C, Maryland and Virginia) I am going to give you a lovely lima bean soup recipe(I know what your thinking lima beans yuck, but this is AMAZING).
Lima Bean Soup
Ingredients
- 1 bag dried lima beans
- 2 large carrots
- 2 stocks celery
- 1 medium onion
- 4 cloves garlic
- 4 strips turkey bacon
- salt and pepper to taste
Directions
- Soak the lima beans in hot/warm water for an hour or until soft, then drain.
- Cut up onions, garlic and turkey bacon, then saute until the onions and bacon are soft.
- Cut celery and carrots into bite size pieces.
- Add 5 cups of water into a big pot then add the carrots, celery, lima beans and all the saute pan ingredients, bring to a boil then turn it down to low and simmer for an hour to and hour and a half.
(If you would like to make it in the crock-pot you can just add everything into the crock-pot and let it go on low for 5-6 hours, I suggest soaking the beans a little less if you are going to cook it in the crock-pot)

EWW Lima beans! But maybe the bacon gives it a good flavor. We will have to try it and let you know!
